Healthier Than Overnight Oats: Forbidden Rice Porridge

Forbidden rice, also known as black rice or purple rice, is a type of heirloom rice that has long been considered a superfood in traditional Chinese medicine. Most often it was prescribed for women to help keep grays at bay. Nowadays, we know that forbidden rice is incredible for its high nutrient content and potential health benefits. It is rich in antioxidants, particularly anthocyanins, which give the rice its dark color.
One of my favorite ways to enjoy it is as a morning porridge, cooked with red bean, pearl barley, black soybeans, and a little honey for added benefits. Here’s how to make it:

Instructions
Wash all the dried ingredients then soak overnight
Drain the dried ingredients then add to a pot with water (3 cups)
Bring to a boil, then let it simmer for roughly 1 hour, making sure to check on it at the 45 mins mark and giving it a gentle stir — if it’s looking a bit dry, add in 1/2 cup of water
You’ll know it’s done when the rice is a bit sticky and soft and the beans are softened
Enjoy with a drizzle of honey, splash of oat milk, black sesame seeds, and any fruit you’d like
