The Pasta Sauce Recipe of Dreams

To me, there is NOTHING better than a simple tomato sauce pasta. When made with fresh summer tomatoes, something so simple can be utterly mind blowing. This time, I wanted to make a tomato sauce as simply as possible. No tomato paste, no anchovies, just using the staple pantry ingredients I always have. SO this is what I came up with and I have 0 regrets with how well it turned out.
Ingredients:
6-8 fresh roma tomatoes from the farmer’s market
2-3 cloves of garlic
1/2 diced onion
Handful of basil, thyme, or oregano (even better, combo of all three)
1 tbsp miso paste
1 tbsp salt
1 tbsp butter
Instructions:
Add the diced garlic and onion to a pot that’s been generously lubed with olive oil (yes I said that okay)
Slice up the tomatoes, saving all the juices and add to the pot
Give the tomatoes a stir and let everything come to a boil, then lower the heat to low and cover with a lid
Let it simmer for a total of 20 mins, giving it a gentle stir every 10 mins
Next add in the herbs and stir the miso paste into the sauce by pushing the paste through a strainer and directly into the mushy tomatoes
Let it simmer for another 15 mins and finally add in a knob of butter and season with salt to taste — I ended up adding about 1 tbsp
Keep in the fridge for up to a week or consume it immediately with a handful of pasta
